Beixy’s Kitchen started with a husband who wanted free empanadas 24/7… and two weeks later, there was a food truck in the driveway. 😂

But behind the humor is a real small-business story about planning, risk, community support, and figuring things out as you go.

Beixy says passion alone isn’t enough—you have to understand the numbers, know the risk, and be willing to learn from the right people. Along the way, other local businesses helped open doors too, including Deidra at @idahocoffeecompany , who gave them a place to start before the truck was even ready.

Then local artist Mark Daniels (@creativechameleonmd ) helped turn that truck into something bigger than a place to grab food. Its colors represent Venezuela, while the Pocatello flag represents Beixy’s other home.

At the end of the day, that’s what Beixy’s Kitchen is really about: making people feel welcome, sharing her culture through food, and creating a little sense of home wherever the truck goes. 🥹❤️

And yes… apparently being recognized as “the empanada lady” in Costco comes with the territory. 😄
